How to announce messages and restrict applications on the Apple Watch
Before you can turn on Message Announcement with Siri, it's important to note that your AirPods, Beats headphones, or any compatible headphones are connected to your Apple Watch to read messages out loud.
The list of compatible devices that support this feature are:

2nd generation or later AirPods ◉

Beats Solo Pro ◉
In addition to these headphones, the iPhone must be on iOS 15 and watchOS 8.
To enable this feature, go to the following on your Apple Watch:
◉ Open Settings on the Apple Watch.
◉ Tap on Siri, then Announce Notifications, then turn it on.
◉ You can also open Settings on the iPhone, then go to notifications, then notification announcement, then turn on notification announcement.
Choose apps to announce notifications
◉ You can choose which apps are allowed to announce notifications.
◉ Put the paired headphones in your ears.
◉ Open Settings on Apple TV.
◉ Go to Siri, then Notifications Announcement, then scroll up, then tap the apps you want to receive sound notifications from.
By default, apps will be disabled to advertise messages, scroll down to see a list of apps installed on your device that send push notifications, activate each app whose notification you want to read through Siri.
With this feature enabled, when an enabled app receives a notification, Siri will read the message through your headphones. In the case of Messages, or other apps that allow replies, Siri will wait for a response after the message, say Reply, and Siri will confirm your reply and send it directly.
How to Pause Advertisement for Notifications on Apple Watch
If you're in a situation where you don't want to be bothered by the notifications that Siri is reading, or you just want to take a break from the feature temporarily, you can quickly disable the feature by doing the following:
◉ Open Control Center on the Apple Watch by touching and holding the bottom of the screen, then swipe up to open Control Center while on the watch face.
◉ Click on the icon to speak the 
notification to stop .
◉ On the iPhone, if the bell icon with sound waves is red, tap it to turn it off, red means it is enabled, and gray means it is disabled or does not have AirPods connected or compatible headphones.
How to quickly stop Siri from reading a message on the Apple Watch
If you're in the middle of important work and want to quickly disable Siri from continuing to read a message, do any of the following to stop reading the message right away:
◉ Say “Stop” or “Cancel” while reading the message.
◉ Press the Digital Crown on AirPods Max.
◉ Press force sensor on AirPods Pro and AirPods 3rd generation.
◉ Double-click on any of the second generation AirPods.
◉ Remove one of the AirPods, it works on AirPods Pro and AirPods 2nd or 3rd generation.
When you perform any of these steps, Siri will be stopped from speaking immediately. This will come in handy when you are in the middle of a conversation and Siri suddenly interrupts you to read a message.
